| In vitro study | Ribitol is a pentitol Crystal identified from the plant Adonis vernalis. Ribitol in a 10% NFSM suspension was 1.45 to 2.18 times more protective than the same concentration of glycerol. 0.75 M Ribitol had the highest antifreeze effect. Among the 13 tested organisms, including S. lactis T164, 11 were protected by Ribitol to a degree greater than 80%. Ribitol had a strong protective effect on lactic acid bacteria in the freeze-drying process. |
